The round glass thing you see me sticking in all of my fermented foods is called a fermentation weight. Vegetable fermentation is an anaerobic process, and all you need to make that happen is a glass fermentation weight, like this one. The glass weight keeps all the vegetables submerged in the liquid, where there is no oxygen. You don’t need a fancy jar, or a fancy complicated lid, or any expensive equipment to “keep it anaerobic”. One wide mouth glass weight costs approximately $3, it fits weck jars and wide mouth mason jars, is ridiculously easy to use, easy to keep clean, and lasts forever. Literally, the only way I like cauliflower fermented… a tiny amount, mixed with lots of other delicious vegetables! btw, it is pronounced “jar-din-AIR-ah” or you can say it as the Italians do “giar-di-niè-ra” or you can say it like a lot of Americans do “gaar-deen-ee-uh” lol It literally means “from the garden” or “gardener” Here is what you need to make it: 120 grams cauliflower 100 grams cucumber 100 grams bell pepper 50 grams jalapeño 30 grams shallots 50 grams carrots 500 grams water 28 grams salt 2 bay leaves 4 weeks of fermentation for best results! Coconut Water Kefir 🥥 If you are a student in our Fermented Drinks Semester online course, you know that I swear by adding a bit of molasses to my water kefir. Molasses adds essential minerals to keep the water kefir grains healthy and strong. Another option though is to feed your kefir grains coconut water! Water kefir can be brewed with coconut water, which is naturally high in electrolytes, enzymes, and nutrients. When fermented with water kefir grains, coconut water is also easier to digest and contains more boiavailable vitamins and minerals. Coconut water kefir is my favorite addition to an adrenal cocktail.
